Easy Beetroot Soup

Standard batch serves 4

Yields1 Serving
 14 Pre-cooked beetroots
 2 cups Frozen onions
 2 cups Fresh celery
 1 tablespoon Frozen Garlic
 1 tablespoon dried thyme
 1 tablespoon Honey
 1 litre vegetable stock
 Salt and Pepper

Beetroot Soup
Serves 10

Method
Chop the celery and add to a pan, add the celery, garlic and thyme and cook on stove top until all soft.
Cut the beetroot up into chunks and add this to the blender, add the onion mix and the honey, stock and salt and pepper, blend until smooth.
You may have to do this in portions depending on the size of your blender.
Add to sealable freezer soup bags.

Ready to Eat
Simply defrost and heat!

If you make this with a large bag of beetroot from Costco, then it should make about 12 portions of soup.
