pork sausages8 sausages

corn cobettes4 piece

red peppers, cut into chunks2 pepper

Courgette, cut into chunks1 piece

red onion, cut into chunks2 piece

smoked paprika2 tsp

dried rosemary2 tsp

olive oil2 tbsp
Method
Ready to freeze

Add all of the ingredients to a large labelled freezer bag, mix, seal and freeze flat.
Ready to cook

Remove from the freezer and leave to fully defrost. Once defrosted, preheat the oven to 180oc. Tip the contents of the freezer bag onto a baking tray, placing the sausages on top of the veggies. Cook for 35-40 minutes.
can you freeze un blanched courgette , will it be mushy when defrosted?
Yes you can, it will be softer as it is being cooked along with the all the vegetables. Hope that helps!
What would you suggest to serve with this? I have three growing boys who need bulk lol
I would do wedges or pasta!
