'Grab and Cook' Middle Eastern Chickpea and Halloumi Traybake

This super easy grab and cook traybake combines all the likely components of a falafel. It is so delicious and a great midweek meal that will go down a treat with the whole family!

Ingredients

chickpeas1 tin

red peppers, cut into thick slices2 pepper

red onion, cut into thick chunks1 piece
-
aubergine, cut into chunks1 piece

carrots, diced into thick chunks2 piece

fresh coriander, finely chopped1 handful

cumin2 tsp
-
coriander2 tsp

paprika1 tsp

harissa paste2 tsp

olive oil3 tbsp

halloumi225 g
Method

- Add all the ingredients apart from the halloumi to a large labelled freezer bag and mix. Add the halloumi slices to a smaller bag, slot inside and freeze flat.
Ready to freeze

Place the bag flat in the freezer.
Ready to cook

Remove from the freezer and allow to fully defrost. Once defrosted, preheat the oven to 180oc. Pour everything onto a baking tray and cook for 20 minutes. Remove from the oven, give everything a good mix and then place the halloumi slices on top with a drizzle of olive oil and place back into the oven for 15 minutes.
There is no mention of halloumi in ingredients list? How much do l need?
Hi Sarah, sorry have just added halloumi to the ingredients. It is a 225g block of halloumi. Hope that helps!
In my haste….I didnt freeze with the olive oil or paste…..will the veggies be OK? 🙁
Yes not a problem at all just add when you come to cook 🙂

yes not a problem at all, you can keep these bags in the fridge for up to 3 days!
Do you cook the halloumi or add it cold?
