'Grab and Cook' Veggie Tagine
This is such an easy recipe and cooks brilliantly in the slow cooker! Full of goodness and perfect for autumn and winter. This makes 4-6 portions. I love using a crock pot I have had mine for years and it really has stood the test of time!

Ingredients

frozen diced onions1 cup

frozen chopped garlic2 tsp

aubergine, chopped into chunks1

medium sized sweet potato, peeled and cut unto chunks1

frozen sliced peppers1 cup (175 g)

dried apricots1 handful
-
harissa paste2 tsp
-
chickpeas1 tin
-
tagine seasoning2 tsp
-
chopped tomatoes2 tins
To serve
-
fresh coriander1 handful
Method

Simply add all the ingredients into one large labelled freezer bag.

Ready to freeze
Seal the freezer bag and lay flat in the freezer.

Ready to cook
Remove from the freezer and allow to fully defrost. Once defrosted, pour into a slow and cook on high for 3-4 hours or low for 6-7.
Serve with some couscous, fresh coriander and a dollop of yogurt for a delicious Middle Eastern inspired meal.

How would you recommend cooking this without a slow cooker please?

Struggling to get hold of the tagine seasoning, what can I use instead?
Instead of tagine seasoning mix 1 tsp cumin, coriander, cinnamon and paprika. Hope that helps!
Tajine Spice is called Ras el hanout at a lot of places.
“Ras el Hanout” is the traditional tagine seasoning – it’s a dry powder but some places sell it as a paste too.
Made this for my son and daughter in law as they are both vegetarians. Went down very well except my husband said, “is there any meat in this?” Doh! 🤪. You have to love them!! 🤣😂. Love your recipes. I’m a true convert as I’m telling everyone about you.
