Halloumi skewers
A delicious and simple vegetarian recipe for the BBQ

Halloumi cheese2 packets

Coriander1 bunch

Baby button mushrooms100 g

Baby peppers1 jar

Garlic oil4 tablespoon
Method

Cut the halloumi into large chunks.

Chop the coriander up on the chopping board and roll the halloumi chunks over it to coat.

Take the wooden skewers and thread onto each the halloumi chunks, alternating with the vegetables.

Ready for the Freezer
Wrap 4 prepared skewers together in a piece of cling film and place in a freezer bag or tin foil to freeze. Wrapping in cling film too avoids the ends of the skewers poking through the freezer bag.

Ready to Eat
Defrost in the fridge overnight. Place the skewers in a dish and drizzle some garlic oil over each one before tossing the skewers onto the barbecue. Turn occasionally and enjoy once the halloumi is golden all over.
