10 meals in 1 hour - chicken

OK! For this section we are going to be making 5 different recipes with each recipe making 2 family meals for 4 people, so you will end up with 10 family meals for 4!

We are going to make:

  • Chicken Balti
  • Enchiladas
  • Brides Chicken
  • Mozzarella Hasselback Chicken
  • Hunters Chicken

I’ve given you the shopping list first. Once you have all the ingredients from the list, you will have everything you need for all ten meals. The ingredients you will see under each recipe are taken from the shopping list.

    34 breasts
  • Smoked back bacon
    1 packet
  • Grated cheese
    1 packet
  • BBQ sauce
    1 bottle
  • Mozzarella
    2 balls
  • Tomatoes

  • Frozen diced onions
    1 packet (500 g)
  • Frozen chopped spinach
    1 packet (900 g)
  • Chopped tomatoes
    6 tins (2.4 kg)
  • Pataks balti paste
    1 jar (283 g)
  • Broccoli
    3 heads
  • Fajita/taco seasoning
    1 packet
  • Frozen or fresh peppers
    1 packet
  • Corn tortilla wraps
    8
  • Mexican salsa
    1 jar
  • Condensed soup (mushroom or chicken)
    4 tins
  • Lemon
    1
  • Curry powder (medium)
    1 pot
  • Button mushrooms
    2 packets (600 g)
  • Mayonnaise
    1 jar

Method

  1. Brides Chicken

    Ingredients

    • 18 chicken breasts (6 for Brides chicken and 12 more to cook for the Balti and enchilada recipes later)
    • 4 cups frozen, chopped onions

    First put a large pan on the hob to heat some oil.

    While it’s heating, arrange:

    6 chicken breasts for Brides chicken in a foil parcel on a baking sheet and put them in the oven to cook for 30-40 minutes.

    Now add the 4 cups of frozen onions to the pan for the curry and enchilada recipes. While heating, dice up the 12 chicken breasts for these 2 recipes and add to pan. You will need to stir this on occasion, but while you wait use the extra time to make the next two no-cook recipes.

  2. Hunters chicken

    Ingredients

    • 8 chicken breasts
    • 8 strips of smoked back bacon
    • 2 cups of grated cheese
    • 2 cup of BBQ sauce

    Use 2 small freezer bags and put 1 cup of grated cheese in each bag.

    Use another 2 small freezer bags and put 1 cup of BBQ sauce in each bag.

    Lay out 2 large pieces of tinfoil, take each of the 8 chicken breasts and wrap 1 strip of bacon around each breast, place 4 breasts in one piece of tinfoil and wrap it into a parcel. Put the other 4 chicken breasts in the other foil parcel.

    Put each foil parcel in a large freezer bag, labelled Hunters Chicken for 4, add 1 small bag of cheese and 1 bag of BBQ sauce to each of the large bags, seal and freeze flat.

  3. Mozzarella Hasselback Chicken

    (Before you move onto this step, remember to stir your chicken pot)

    Ingredients

    • 8 chicken breasts
    • 2 ball of sliced mozzarella
    • 5 sliced tomatoes
    • Fresh basil

    Cut slices across the top of each chicken breast Hasselback style.

    Slice your mozzarella and tomatoes and insert alternating slices into the chicken slots.

    Tuck in some fresh basil leaves.

    Wrap 4 chicken breasts together in a foil parcel and place in a large labelled freezer bag, do the same for the remaining 4 chicken breasts.

    Check if the chicken in the oven is cooked – if so, remove now and leave aside to cool a little.

  4. Chicken Balti

    Now return to the chicken and onion mixture in the pan.

    Place half the mixture into a mixing bowl, and leave to the side, this is for the enchiladas later.

    To the sauce pan add:

    Ingredients

    • 24 frozen spinach cubes
    • 4 cans of chopped tomatoes
    • 1 jar (283g) Pataks Balti spice paste
    • Optional fresh broccoli pieces.
    • 200ml of water

    Make the Balti curry in the saucepan by adding the tins of tomatoes, frozen chopped spinach cubes and the curry paste. Leave on hob to bubble away until spinach is cooked through.

    Once cool, portion into 2 labelled freezer bags. 4 cups per bag (1 cup = 1 portion for 1).

    While the Balti is bubbling you can use the time to make the enchiladas.

  5. Enchiladas

    Ingredients

    • 1 packet of Fajita or taco seasoning
    • 2 cups of Frozen or fresh Peppers (optional)
    • 8 Corn Tortillas (wraps)
    • 2 Cans chopped tomatoes
    • 2 cups of grated cheese
    • 1 cup of Mexican Salsa

    With the remaining cooked chicken in the mixing bowl, stir in the fajita/taco seasoning, then spoon the chicken into each tortilla wrap.

    Add in some grated cheese before folding up each wrap and placing the wraps in an oven dish or foil container.

    Pour salsa and chopped tomatoes over the wraps, add more cheese and the chopped peppers.

    Leave to completely cool, before sealing and freezing.

  6. Brides Chicken

    Ingredients

    • 2 head of chopped broccoli
    • 4 cans of mushroom or chicken condensed soup
    • 4 teaspoon of lemon juice
    • 4 teaspoon of medium curry powder
    • 6 cups of button mushrooms
    • 2 cups of mayonnaise

    Simmer the broccoli florets in a pan of boiling water for 1-2 minutes to blanche.

    Take the 6 cooked chicken breasts and shred into a large bowl (use the same bowl as above, just give it a quick wash through). Add:

    1. Cooked, drained broccoli florets
    2. Button mushrooms
    3. Cream of mushroom or chicken soup
    4. Mayonnaise
    5. Lemon juice
    6. Curry powder

    Mix well, divide the mixture into two and put each half into a labelled bag ready for the freezer.

  7. Ready to Eat

    Defrost in fridge overnight

    Brides chicken
    Tip into a saucepan and stir over a medium heat until piping hot all through. Alternatively if you have time, place in an oven dish and bake at 180°C with grated cheese on top for 20-25 minutes or until cooked all the way through.

    Hunters chicken
    Put the chicken breasts in oven at 180°C for 20-25 mins or until cooked through. Pour over the BBQ sauce, scatter with cheese, return to oven for 2-3 mins until cheese has melted.

    Mozzarella hasselback chicken
    Bake in foil at 180°C for 30 mins or until cooked through.

    Chicken balti
    Tip into a saucepan and stir over a medium heat until piping hot. Alternatively heat in a microwave oven.

    Enchiladas
    Bake in oven at 180°C for 20 minutes until the cheese is bubbling.

    Ensure all the food is piping hot throughout before serving.

  2. I have just bought double of what I needed of chicken for a village BBQ tomorrow. Having divided up the rest and put it in the freezer I visited this page, Had I had time to shop for the other ingredients it would have been an ideal opportunity for me to make these dishes as they seem quick and easy with convenience ingredients. However i shall be making loads of salads so they will have to defrost in batches and do these dishes quickly from scratch. At least you have given some quick and easy ideas that I can still use post defrost!

  5. I’ve got another question about quantities. Roughly how much do the chicken breasts you use weigh? I buy my chicken in a 5kg pack from Makro but the chicken breasts are big. I was defrosting a bag of 3 and have just weighed them and they’re coming in at 740g. I don’t want to end up using more chicken than I have to! Thanks.

  6. Hi this looks amazing! I’m going to try it this weekend. I am trying to reduce the waste we make – any ideas on how to do it with out foil or plastic bags.

    Got some take away tubs, and freeze using a Pyrex dish for enchiladas maybe ..?

  7. Hi I’m thinking of giving this a try but we don’t like balti could I change the curry sauce to a Korma or would it need more tweaking?

    1. Yes of course you can sweetheart. I always use the tikka one as dont like balti. X

    1. Hi Catherine, for most freezers this would be up to 3 months but you need to check specifically with the freezer that you have, as different makes vary. There is probably a manufacturer’s recommendation stuck somewhere in your freezer so check that first. Happy batching!

  11. I’m 8 month pregnant this would be great for when I have baby just wondering how long can they be in the freezer for and what sizes are your bags they look huge thanks

    1. Hi Nicola, I use a variety of bags from about 0.4 litres up which you can order from my website under the BUY button or get directly from IKEA or most supermarkets. Most freezers say keep upto 3 months but different freezer makes vary so I would suggest checking the manufacturer’s recommendations for your freezer model. All the best with the baby – once you start weaning you can batch cook your baby’s favourite veggie purees and freeze in ice cube trays for individual portions.

  12. How much chicken will be needed if buying the big ‘double breasts’ like from costco or muscle foods?

    1. We don’t use the bride’s chicken recipe either (not a fan of mayo) so to replace this I double the enchiladas recipe and use the mix for fajitas instead!

I’m 75 and am a bit forgetful, so trying to think what to cook every evening does my head it especially when my daughter visits, I ask them to help decide what to cook pft! they say anything will do! but you have made it so easy for me now, I have a freezer full of ready-made and oven-ready food thank you so much xx

  14. Great idea but be wary about the quantity of each ingredient if you’re not shopping in the UK. Without measurements in grams it’s difficult to get the ratios correct. I’ve just realised after making the brides chicken that the condensed soup sold in Australia is in much larger tins than in the UK. Hope I can salvage it!
    I also had trouble with the amount of chicken required, I’m guessing a breast here is larger by looking at the video.
    I have eaten the enchiladas and made a madras instead of Balti, both were enjoyable.

  15. I found your book during the first lock down last year it’s now my Bible .I have made the chicken pie a few times and substituted pork for the chicken today I’ve made three bags of sticky Asian chicken and one teriyaki for the freezer happy days.

  16. Gave this a go today. Be warned you need a huge pot for the chicken, used my biggest and there was no way I could add the broccoli 🤣 Followed the instructions on my phone without a problem, all told 1.5 hours for my first go. Freezer is now fit to burst and dinner for tonight sorted and tomorrow in the fridge. When we get a bit more room I’m going to give the fish one a go. Perfect for when three of us have a meat meal 2/3 nights a week and our vegetarian daughter needs to eat earlier as have batch cooked for her for a while.

  17. Amazing, took me longer than the 1 hour for my first time but 100% worth it. Was also surprised how little dishes i had to clear up at the end I was impressed! I divided the portions for 2 so made 20 meals for me and my husband.
    Only downside is the funny looks you get at the shop for buying 10 packs of chicken. I want to reduce my use of single use plastic but for these recipes I think you would struggle to fit them all in the freezer if you used rigid containers. Also note that you will want an empty freezer before starting this.
    Balti is our favourite, and next time I’ll make a mix of Hunters chicken, Balmoral and Braemar as it doesn’t deviate too much.
    Can’t wait to try 10 mince meals in an hour ( or 20meals for us)

    1. Hi Maria, no don’t use pre frozen chicken as you will have to defrost and then refreeze which is not a good idea. Use fresh chicken and you can reduce the cost but halving the amount of chicken and adding more veggies! Hope that helps!

  18. I loved this! It’s really, really clever. Not much chopping, very little mess, you don’t need endless pans, great variety of meals. I never got overwhelmed at any point but it did take me closer to 2 hours first time. We now have 20 meals to keep us going which was so worth the effort.

    It’s just what I was looking for, thank you so much.
