melted butter120 g

shortbread biscuits, blitzed into a crumb250 g

cream cheese500 g

double cream1 cup (240 ml)

vanilla extract1 tsp

icing sugar45 g

strawberries, sliced350 g
Method

- Add the melted butter and blitzed shortbread to a bowl and mix. Pour into an 8 inch springfrom tin and press down with the back of a spoon. Place in the fridge while you make the filling.
- Add the cream cheese, double cream, vanilla and icing sugar to a mixing bowl and mix until you have a smooth thick mix. Stir through ⅔ of the sliced strawberries and mix.
- Pour onto the base and arrange the rest of the strawberries on top. Cover well and place into the fridge to set for at least 4 hours.

To freeze
Wrap up well in cling film and freeze. Remove when needed and leave to defrost overnight in the fridge before slicing up and enjoying!
