  • eggs
    8 egg
  • ham, chopped (or any other cooked meat)
    2 slices
  • peppers (or any other veggies)
    1 pepper
  • cherry tomatoes (or any other veggies)
    8 tomatoes
  • feta cheese or any other cheese
    50 g

Method

    1. preheat the oven to 180oc and line a 15 x 10cm baking dish (or any other small baking dish) with parchment paper.
    2. add and veggies to meat to the bottom of the dish.
    3. whisk the eggs In a jug with a little salt and pepper and then pour into the dish.
    4. scatter over the cheese and cook for 20-25 minutes until set.
    5. Slice up into 4, leave to cool then wrap up well in cling film and add to a labelled freezer bag and freeze.
  1. Ready to eat

    remove from the freezer and leave to defrost. reheat in the microwave for 2-3 minutes until hot.
