Spiced sweet potato soup

  • Coconut oil
    1 tablespoon
  • Frozen pre-chopped onions
    2 cups (230 g)
  • Frozen diced sweet potato
    5 cups
  • Frozen pre-chopped mixed peppers
    3 cups (525 g)
  • Goan Spice Blend (or try Korma)
    2 tsp
  • Vegetable stock
    1.5 litres
  • Salt and pepper
    1
  • Fresh coriander (to garnish)
    1 handful

Method

  1. Heat the oil and cook the onions until soft.

  2. Add the sweet potatoes and peppers to the onions, stir then turn down the heat to low and put a lid on.

  3. Let the vegetables sweat for 5 mins or so.

  4. Add the stock and cook until the vegetables are soft, about 15-20 mins.

  5. Whizz up with a hand-held blender, season with salt and pepper, then garnish with coriander.

  6. Ready for the freezer

    Divide the mixture into sealable zip lock bags – 1-2 cups per person.
    Once cool, label the bag ready for the freezer.

  7. Ready to Eat

    Defrost and heat until piping hot. Can be heated in a pan or in the microwave.
