Spiced sweet potato soup

Ingredients

Coconut oil1 tablespoon

Frozen pre-chopped onions2 cups (230 g)

Frozen diced sweet potato5 cups

Frozen pre-chopped mixed peppers3 cups (525 g)

Goan Spice Blend (or try Korma)2 tsp

Vegetable stock1.5 litres
-
Salt and pepper1

Fresh coriander (to garnish)1 handful
Method

Heat the oil and cook the onions until soft.

Add the sweet potatoes and peppers to the onions, stir then turn down the heat to low and put a lid on.

Let the vegetables sweat for 5 mins or so.

Add the stock and cook until the vegetables are soft, about 15-20 mins.

Whizz up with a hand-held blender, season with salt and pepper, then garnish with coriander.

Ready for the freezer
Divide the mixture into sealable zip lock bags – 1-2 cups per person.
Once cool, label the bag ready for the freezer. -
Ready to Eat
Defrost and heat until piping hot. Can be heated in a pan or in the microwave.
If I want to use fresh vegetables instead of frozen what are the quantities? Thanks.
