Green pasta sauce with crispy bacon

This pasta sauce is packed full of veg and requires no chopping at all! To make this vegetarian, simply take out the bacon.

  • Olive oil
    1 tsp
  • Frozen pre-chopped garlic
    1 tsp
  • Frozen pre-chopped onion
    1 cup (115 g)
  • Frozen broccoli florets
    1 cup (70 g)
  • Frozen spinich
    4 cubes
  • Frozen peas
    2 cups (310 g)
  • Vegetable stock (120ml water)
    0.5 cups
  • Creme Fraiche
    0.25 cups (50 g)
  • Pre-grated parmesan
    0.5 cups (50 g)
  • Bacon lardons
    2 packets (200 g)
  • Salt and pepper

Method

  1. Heat the oil in a saucepan on a low to medium heat. Add the garlic and onions and cook until softened.

  2. Next add the broccoli, spinach and peas.

  3. Add the chicken stock, bring to the boil then reduce the heat and leave to cook.

  4. While the vegetables are cooking, add a little oil to a frying pan and fry the bacon lardons until crispy. Remove from the heat and put into a little bowl with some kitchen roll at the bottom to soak up any excess oil.

  5. Once all the vegetables are soft, remove from the heat and add the crème fraiche and parmesan.

  6. Using a blender, blend the mixture until the sauce is smooth. You may need to add a little water if the sauce is too thick.

  7. Finally, add the crispy bacon bits to the sauce and season with salt and pepper

  8. To Serve

    This sauce can now be used to top your favourite type of pasta.

  9. Ready for the Freezer

    Once sauce has cooled, pour into a labelled reusable freezer bag and put into the freezer.

  10. Ready to Eat

    Once defrosted, pour into a saucepan or place in the microwave and heat through until piping hot. Serve on pasta of your choice.

  2. Tasted good and glad I made it but I needed to add a lot more water/stock to cook the veg. 120ml just wasn’t enough! Think I tired out my poor blender stick too. Thanks for the recipe though!

  3. Just wanted to say that this has been a great weaning recipe for my 10 month old and is currently her favourite dish! To make it baby friendly, I used a no salt stock cube and didn’t add the Parmesan when I blended the veg. I add the parmesan, bacon, salt and pepper at the very end for me and my husband and she has it without these ingredients. We love being able to eat together and have batches of this frozen at our house and my parents as it is something we she’ll wolf down every time :).
