BASIC TOMATO SAUCE

Once you make this simple recipe you will never go back to jarred sauce. It is so easy, quick and cheap to make and can be used for a multitude of dishes, from pizza toppings to lasagne.

Standard batch serves 4

Yields1 Serving
 2 cans chopped tomatoes
 1 carton passata (500g)
 2 tablespoons tomato puree
 3 teaspoons dried oregano
 1 teaspoon ready chopped frozen garlic or garlic puree
 salt and pepper

Add all ingredients to large pot and stir until combined, leave to simmer for 15 minutes until thickened.
Take off the heat and allow to cool completely.

I always make this in advance of cooking things like meatballs and lasagnes, spaghetti Bolognese, as it needs to be completely cool before going into the bags.
I usually triple the recipe, so I have plenty for all dishes that I plan to make. 


Pizza Topping

Once this sauce is made, take a few ladles out of the pot and put 1 ladle full into each small freezer bag add some extra oregano and an extra 2 teaspoons full of tomato puree to each bag. These bags can be labelled and frozen flat, alongside pizza bases.

Make sure that reheated food is thoroughly cooked all the way through. If you’re cooking or reheating meat, cut it open with a clean knife to check it is piping hot all the way through – it should be steaming. www.foodsafe.eu
