Bacon and Chorizo Pasta Bags

This video shows you how to make this pasta sauce in large quantities. The recipe is for 4 people but you can use the double or triple feature to increase the quantities if you are making more portions for the freezer.

Standard batch serves 4

Yields1 Serving
 olive oil
 4 rashers of bacon
 ½ cup chopped chorizo (about 70 g for 1/2 cup)
 1 cup frozen pre-chopped onions
 1 tin chopped tomatoes, drained
 1 carton passata
 2 tablespoons tomato puree
 1 cup mushrooms
 1 tablespoon oregano
 salt and pepper, to taste

Method

Heat a splash of oil in a frying pan and fry the onions.
As your onions are browning chop the chorizo and bacon and add to the pan. Stir every few minutes to make sure it is all cooking evenly.

As this is cooking start on your sauce - take a medium sized pan and add in your chopped tomatoes, passata, tomato puree and herbs. Now stir in your frozen mushrooms and allow the sauce to heat while your onions cook in the other pan.

Once both pans are cooked, mix all ingredients together and leave to cool.

Ready for the freezer

Portion into a labelled bag, and freeze flat.

Ready To Eat

Defrost bag, add to pan and heat over a medium heat until piping hot.

Cook pasta, and serve sauce over the hot pasta.

Make sure that reheated food is thoroughly cooked all the way through. If you’re cooking or reheating meat, cut it open with a clean knife to check it is piping hot all the way through – it should be steaming. www.foodsafe.eu
