Bacon and chorizo pasta bags

This video shows you how to make this pasta sauce in large quantities. The recipe is for 4 people but you can use the double or triple feature to increase the quantities if you are making more portions for the freezer.

  • Olive oil
    1 tablespoon
  • frozen diced onions
    1 cup (115 g)
  • Bacon
    4 rashers (40 g)
  • Chopped chorizo
    0.5 cups (40 g)
  • Chopped tomato
    1 tin (500 g)
  • Passata
    1 carton (500 g)
  • Tomato Puree
    2 tablespoon (70 g)
  • Mushroom
    1 cup (70 g)
  • Oregano
    1 tablespoon
  • salt and pepper
    1 pinch

Method

  1. Heat a splash of oil in a frying pan and fry the onions.

  2. As your onions are browning chop the chorizo and bacon and add to the pan. Stir every few minutes to make sure it is all cooking evenly.

  3. As this is cooking start on your sauce – take a medium sized pan and add in your chopped tomatoes, passata, tomato puree and herbs. Now stir in your frozen mushrooms and allow the sauce to heat while your onions cook in the other pan.

  4. Once both pans are cooked, mix all ingredients together and leave to cool.

  5. Ready for the freezer

    Portion into a labelled bag, and freeze flat.

  6. Ready To Eat

    Defrost bag, add to pan and heat over a medium heat until piping hot.

    Cook pasta, and serve sauce over the hot pasta.
