Veggie Tagine

This is a super healthy and easy mid week meal! Serve with rice or cous cous for a nutritious packed meal.

  • olive oil
    1 tbsp
  • frozen diced onions
    1 cup
  • frozen chopped garlic
    2 tsp
  • medium sized sweet potato
    1 potato
  • aubergine
    1 piece
  • harissa paste
    2 tsp
  • tagine spices
    2 tsp
  • chopped tomatoes
    2 tins
  • chickpeas
    1 tin
  • dried apricots
    1 handful
  • fresh coriander
    1 handful
  • frozen sliced peppers
    1 cup

Method

    1. To a large saucepan add the oil, place on a medium heat and add the frozen onions and garlic. Cook until soft.
    2. Add the sweet potato chunks, diced aubergine, sliced red pepper, harissa paste, tagine spices, chopped tomatoes (rinse out tins with ½ tin of water added to the tagine), drained chickpeas, diced apricots and coriander. Bring the boil and then reduce the heat to a simmer and cook for 25-30 minutes.
    3. Once cooked, remove from the heat and season to taste.

Ready to freeze

  1. Once cool, add to a large freezer bag and freeze flat.

  1. Remove from the freezer and leave to defrost. Once defrosted, reheat in a saucepan or in the microwave until piping hot.

    Serve with cous cous, a dollop of yoghurt and some fresh coriander

  2. I have just finished a bowl of this for my lunch today . It was delicious! The heat from the harissa and the sweetness from the apricot pieces make it an absolute winner.
    So easy to make too, and three portions for the freezer. What’s not to love!

  4. Sorry to appear thick but I’ve tried to find tagine spices but there is no such thing apparently! Is it a few individual spices? If so which ones please? I’m shopping at tesco and Aldi. Thanking you

    1. Oh not to worry, I got my tagine spice in sainsburys. It is a mix of paprika, cumin, coriander and chilli flakes, hope that helps!
