Vegan Sweet Potato Dahl

This Dahl is such a great no cook bag- add everything to the slow cooker and leave it to do the magic! Enjoy

  • red lentils
    2 cups
  • frozen diced sweet potato
    230 g
  • curry powder
    2 tsp
  • cumin
    2 tsp
  • frozen diced onions
    1 cup
  • frozen chopped garlic
    3 tsp
  • frozen chopped ginger
    2 tsp
  • tomato puree
    1 tbsp
  • coconut milk
    1 can

To cook

  • vegetable stock
    3 cups (720 ml)

Method

  1. As this is a no cook bag simply add all your ingredients apart from the vegetable stock into your labelled freezer bag and seal.

Ready to freeze

  1. Place the freezer bag flat in the freezer.

  1. Remove from the freezer and leave to fully defrost. Once defrosted, pour into the slow cooker and cook for 5 hours on low.

    This is great served with some chopped chilli and yoghurt!

  1. Made this yesterday as my youngest kid has decided to become vegetarian, and I’ve been trying out new recipes for my very fussy family. This was a winner all round! I added a small amount of frozen spinach but otherwise made as stated. Love these dump bag recipes, I have a chronic illness and disability so cooking is difficult but recipes like this are a life saver.

  3. Could you add fresh sweet potato to go into freezer? 1 child dairy free, 1 child dairy & gluten free so desperate for easy cooking lol

  4. If you don’t have a slow cooker how could you cook this? (And the tarragon chicken) would it be ok in the oven all together for 30 mins??

    1. The Dahl can be cooked on the hob in a saucepan for around 30 minutes. The tarragon chicken can be cooked in the oven in a baking dish at 160oc for around 45 minutes. Hope that helps, enjoy!

  6. Oh this was so yummy! Easy to prepare, great in the slow cooker (though I then blended mine to make it smoother). A huge win with my son too. Glad we’ve got some left to freeze as well.

  7. Very tasty, I followed the 8 servings recipe and reckon I got a good 10 servings from it. Making it again tomorrow.

  8. Love this recipe. I’ve cooked it in slow cooker and on stove. It’s cheap, filling and a new family favourite in our house.
