Tandoori massala chicken skewers

This is a great simple way of making a tasty meal that is very versatile, from an easy midweek meal with a salad and baked potato to some tasty skewers for the BBQ.
Also great served with freezable Raita recipe.

  • Tandoori masala spice pot
    3 tbsp
  • Natural yoghurt
    5 tbsp
  • Chicken
    500 g (4 breasts)
  • Lemon juice
    1 squeeze
  • Salt
    1 pinch

Method

  1. Mix all the ingredients together in a bowl.

  2. Chop chicken into pieces big enough to go on a skewer.

  3. Add the chicken to the bowl and coat well.

  4. If eating that day, marinade for at least 2 hrs.

  5. Transfer into a labelled freezer bag.

  6. Ready for the Freezer

    Seal your labelled freezer bag, removing all air and freeze flat.

  7. Ready to Eat

    If making chicken breasts:
    When ready to eat, put chicken breasts on a tinfoil lined baking tray for about 20 minutes at 180ºc or until cooked through.

    If making chicken skewers:
    Thread chunks onto skewers and cook on the BBQ until cooked through (about 10 minutes).
