Sweetcorn and Chickpea Burgers

These are a brilliant easy Vegan recipe, packed full of flavour they are the perfect easy midweek meal!

  • Tinned chickpeas
    400 g
  • Tinned sweetcorn
    200 g
  • ground cumin
    2 tsp
  • smoked paprika
    2 tsp
  • plain flour
    2 tablespoon

Method

    1. Add everything to a food processor if you have one, if not you can use a hand blender and add everything into a large mixing bowl.
    2. Once the mix is smooth, bring it together and then tip onto a surface and split into 4 burger shapes. Place the burgers in a large reusable freezer bag.

     

  1. Ready to freeze

    Place the freezer bag of burgers in the freezer.

  2. Ready to eat

    Remove the frozen burgers and place them on a baking tray. Drizzle with oil and place in the oven at 180oc for 25-30 minutes.

    Serve each burger in a bun with a tablespoon of hummus and some salad.

    Maybe a novice question, but should I drain the tinned items before adding them to the bowl, or tip the whole lot in?

  2. Hi! Is it possible to use frozen sweetcorn instead of tinned if I defrost first? If yes, would it still be 200g (to serve 4)?
    Also, does your book have many recipes suitable for a family with a vegetarian and a lactose-free?

    1. Yes not a problem just make sure to drain off any defrosting liquid. Yes lots of vegetarian recipes, there are no specific lactose free recipes but lots of them can be adjusted to suit using lactose free products. Hope that helps!
