Homemade American Style Pancakes
The easiest pancake recipe, fluffy and delicious!

Ingredients

Self-raising flour1.5 cups (260 g)

Baking powder1 tsp

Eggs2

Caster sugar1 tbsp

Milk1 cup (240 ml)

Butter1 Knob
Method

In a mixing bowl add the flour, baking powder, eggs, sugar and start to whisk while slowly pouring in the milk. Make sure to whisk really well to ensure that there are no lumps in the batter. Continue to whisk until you have incorporated all of the milk.

Take a large frying pan and place on a medium heat. Wait for the pan to heat up before adding the knob of butter. Once that has melted, using a soup ladle or ice cream scoop pour the batter in the hot pan, it is up to you what size you make your pancakes. Do not overcrowd the frying pan. Once golden on one side, flip the pancakes and cook until golden on the other side. Repeat until you have used up all of the mix.

Ready to freeze:
Leave the pancakes to cool completely before placing in a reusable freezer bag.Ready to eat:
Defrost pancakes and reheat in the microwave or you can place the frozen pancakes into the toaster to defrost. Serve with some fresh fruit and maple syrup for a great breakfast.
Made these and put some in freezer, just as good as fresh when thawed out.
