Harissa fish traybake
This is a great one pot traybake.

Nutrition (per serving)
Ingredients

Mediterranean vegetables1 packet

Frozen pre-sliced red onion1 cup (115 g)

Cod loin4

Harissa paste4 tsp
Method

Take your cod loin and chop it into 1 inch cubes.

Put these cubes into a freezer bag and add the harissa paste, seal and give a mix around with your hands so all fish is covered with the paste.

Next open the bag and add the red onions into the bag, then seal the bag flat to remove the air, ready for the freezer.

Staple this bag to the packet of frozen roasted veg and place in the freezer.

Ready to eat
Detach the fish bag from the packet of vegetables and remove just the fish bag from the freezer to defrost overnight.
One defrosted and ready to go, add some oil to a tray, empty the bag of veg onto the tray and pour the harissa fish over the top of the vegetables.Cook at 180°C for 15-20 minutes, until piping hot.
Stir around and serve.

This looks so easy, I’m gonna have to try it but my son is a fuss pot and I’m unsure if he’ll enjoy the Harissa.
Give pesto a go, that will work wonderfully as well!
