-
GF self raising flour1 cup (115 g)
-
GF baking powder1 tsp
-
caster sugar1 tablespoon
-
milk1 cup (240 ml)
-
eggs2 egg
-
knob of butter1 Knob
Method
-
In a mixing bowl add the flour, baking powder, eggs, sugar and start to whisk while slowly pouring in the milk. Make sure to whisk really well to ensure that there are no lumps in the batter. Continue to whisk until you have incorporated all of the milk.
-
Take a large frying pan and place on a medium heat. Wait for the pan to heat up before adding the knob of butter. Once that has melted, using a soup ladle or ice cream scoop pour the batter in the hot pan, it is up to you what size you make your pancakes. Do not overcrowd the frying pan. Once golden on one side, flip the pancakes and cook until golden on the other side. Repeat until you have used up all of the mix.
Ready to freeze
-
Leave the pancakes to cool completely before placing in a reusable freezer bag with a small sheet of baking paper between each pancake to stop them sticking.
