Loaded Cajun Burgers
This is the ultimate cajun burger- all the tastes of Florida from home

Nutrition (per serving)
Ingredients

chicken breast4 fillets

cajun spice5 tsp

smoked paprika2 tsp

garlic granules0.5 tsp

olive oil4 tbsp

bacon4 rashers
To serve

ciabatta rolls4 piece

little gem lettuce1 piece
-
avocado1 piece

sliced cheese4 slices
Method

- Take your chicken breasts and cover them with cling film. Using the back of a saucepan bash the chicken at its thicket part to flatten it so the chicken breast is the same thickness all the way through. This will help it to cook evenly.
- To a large bowl add the cajun spice, paprika, garlic granules and olive oil and mix well. Add the chicken breasts to the spice paste making sure to cover each chicken breast well in the marinade. Add to a large reusable freezer bag. Add the slices of bacon on top of the chicken (these do not need to be coated in the marinade).

Ready to freeze
Place the freezer bag of chicken and bacon in the freezer with the ciabatta rolls next to them.

Ready to cook
Remove the chicken and bacon from the freezer and leave to defrost. remove the ciabatta rolls at the same time.
Once defrosted:
To cook the chicken, place a grill pan on a medium heat. When the pan is hot add the chicken breasts and cook for 5-6 minutes on each side, make sure the chicken is fully cooked. In another frying pan, get your bacon cooking and cook until crispy.
Once the chicken is cooked, add a slice of cheese to each chicken fillet, pop a lid on the frying pan and allow the cheese to melt. Once melted remove from heat.
Now to make up your burgers- to the ciabatta rolls add the cajun chicken with melted cheese, a slice of crispy bacon, avocado and some little gem lettuce to each roll. Add mayo to the top of the bun and serve!
