Lemon curd is one of my favourite spreads to use in baking or on toast for breakfast! This recipes makes x 2 jars

Ingredients

  • lemons
    4 lemon
  • caster sugar
    450 g
  • butter, cubed
    100 g
  • eggs
    4 egg

Method

    1. Add everything to a microwavable bowl and mix to combine
    2. Place into the microwave for 1 minute on high, then mix and continue to cook the mixture in 1 minute bursts until the mix starts to thicken. Then cook for 30 seconds at a time and continue to mix until the mixture coats the back of a spoon.
    3. Pour into sterilised jars and seal.
    4. Place into the fridge, this will keep for 2 weeks.
