Lemon curd is one of my favourite spreads to use in baking or on toast for breakfast! This recipes makes x 2 jars

Ingredients

lemons4 lemon

caster sugar450 g

butter, cubed100 g

eggs4 egg
Method

- Add everything to a microwavable bowl and mix to combine
- Place into the microwave for 1 minute on high, then mix and continue to cook the mixture in 1 minute bursts until the mix starts to thicken. Then cook for 30 seconds at a time and continue to mix until the mixture coats the back of a spoon.
- Pour into sterilised jars and seal.
- Place into the fridge, this will keep for 2 weeks.
