Ingredients

  • Coconut milk
    1 can (400 g)
  • Peanut butter
    6 tablespoon (1 jar)
  • Soy sauce
    4 tablespoon
  • Lime juice
    3 tablespoon
  • Brown sugar
    3 tablespoon
  • Frozen chopped garlic
    2 tsp
  • Bhuna spice mix
    2 tsp

Method

  1. Put all the ingredients in a saucepan.

  2. Whisk and slowly bring to the boil until you have a sauce like consistency.

  3. This sauce will thicken as it cools, so you can add some boiling water if needed to thin it out.

  4. Freeze

This makes a lot of satay sauce, so it’s great to batch into small bags. Label and freeze flat.

  5. Ready to Eat

Simply defrost, add to a bowl and stir to regain original consistency. Great served with flatbreads, carrot sticks, halloumi, chicken.
This sauce is suitable for vegans and vegetarians.
