Creamy garlic chicken with leeks & tomatoes

This is a great one-pot dish that the whole family will love, I have been serving this dish for years.

  • Chicken thighs (with skin on)
    8
  • Full fat garlic Philadelphia cheese
    1 tub (280 g)
  • Tomato
    6
  • Frozen pre-chopped leeks
    2 cups (140 g)
  • New potatoes
    1 bag (750 g)

Method

  1. Take the chicken thighs and carefully slide your fingers in between the skin and the meat, creating a pocket in which you can add the garlic Philadelphia. Use all the cream cheese amongst all the chicken.

  2. Place this in a large bag.

  3. Next quarter the tomatoes and add these to the bag with the chicken.

  4. Add the 2 cups of frozen leeks to a separate, small bag and place in the larger bag with chicken.

  5. Ready for the freezer

    Label bag and place in freezer flat

  6. Ready to Eat?

    Defrost the bag overnight in the fridge.

    In a large casserole dish, place some olive oil and salt and add the leeks.
    Put lid on and cook the leeks for 10 minutes.
    Add the rest of the ingredients from the bag to the casserole dish.
    Then add a small bag of new potatoes.

    Cook with lid on until the potatoes are soft and the chicken is cooked through, (Approx 30 – 40 minutes @ 180oc).

  7. Batching

    In prepping the recipe you are simply putting raw ingredients together so it makes perfect sense to make two bags.

  1. cooking this and the potatoes rock hard and meat raw after 60 minutes!!! Taking out and separating to ensure cooked through. Maybe potatoes need parboiling first?? Im so disappointed…cooking to surprise hubby and he is sat eating bread to stave off hunger. Not sure the Creamy Garlic chicken will be served again

    1. Hi Louise, I’m sorry to hear this didn’t work out this time and your poor husband was hungry. If you had the meat and potatoes in for an hour it sounds as though the oven was possibly not hot enough. I can suggest making sure the oven has plenty of time to get to the full temperature before you put the pot in. Do you have an oven thermometer to check it’s hot enough? Also if you put the ingredients in the oven straight from the fridge it will take a bit longer to cook than if you get them out an hour before so they reach room temperature. I hope that helps and that it works next time for you.

  2. This was delish! Made is for my family and served with sourdough and green beans with cherry tomatoes. Sauce was quite runny and I microwaved a bag of baby potatoes before I threw them in . 1 hour here too .

Omg I think this is the one Iv got in the freezer 🤷‍♀️ but I’m not sure,I should have listened to you and took two minutes to actually label them because now I’m not sure but this seems to be the only one with leeks in so it’ll have to wait till next week I was going to take it out for tomorrow but it’s just me on my own tomorrow so there would be loads leftover lol 😂
