Cake ingredients

  • Guinness
    1 cup (240 ml)
  • Plain flour
    1.5 cups (250 g)
  • Caster sugar
    1.5 cups (300 g)
  • Rapeseed oil
    1 cup (240 ml)
  • Cocoa powder
    0.33 cups (35 g)
  • Sour cream
    0.5 cups (100 g)
  • Lemon juice
    2 tsp
  • Baking soda
    1 tsp
  • Vanilla extract
    1 tbsp
  • Egg
    2

Icing ingredients

  • Double cream
    0.5 cups (120 ml)
  • Icing sugar
    0.75 cups (75 g)
  • Full fat soft cheese
    1.5 packets (300 g)

Method

  1. Put all the cake ingredients in a bowl (not the icing ingredients), mix with a hand held whisk until combined to form a smooth batter.

  2. Place batter in a lined high sided cake tin and bake for 45 min, then put foil over top to stop cake from cooking anymore on surface and leave to cook for another 15-20 minutes at 180°C until cooked through.

  3. Remove from oven and leave to cool in tin.

  4. Ready for Freezer

    Once cool, transfer to a sealable freezer bag, remove all air and seal. This will last in the freezer for 3 months.

  5. Ready to Eat

    Remove cake from freezer and allow to defrost in bag.

    This cake is heavy and dense, so with care remove from bag and place on cake plate.

    Combine all the icing ingredients in a bowl, whisk with an electric mixer until icing becomes thick and spreadable.

    Spread on top of cake.
