This easy cupcake recipe used a Betty Crocker mix, sometime you need something sweet and you need it quick. Nothing wrong with a Betty Crocker kit!

  1. There is no recipe for this apart from to sat buy a `Betty Crocker’ cupcake mix box, follow the instructions on the packet and enjoy a fun filled 5 minutes with your kids.

    The Batch Lady isn’t about fab new recipes it’s about getting things done quickly and simply. Betty Crocker cake boxes (most of them) are fab, there is little mess, they taste good, and the end products freeze well. You could make cupcakes from scratch with your kids, but I always feel baking with young children is always more successful when simplified and when they see the results fast.

    Save your kids eating too many by freezing ½ the batch, you can use them for afterschool snacks as they defrost in minutes, add them to lunchboxes and they will defrost by lunchtime. I often bring them out when Zara has friends over that way they can decorate cupcakes without the mess and hassle of making them as well. I always freeze butter icing in different colours if I have too much left over.
