10 minced beef family meals in 1 Hour!

OK! For this section we are going to be making 5 different recipes with each recipe making 2 family meals for 4 people, so you will end up with 10 family meals for 4!

We are going to make:

  • Home-made Burgers
  • Meatballs
  • Fajitas
  • Spaghetti Bolognese
  • Chilli

I’ve given you the shopping list first. Once you have all the ingredients from the list, you will have everything you need for all ten meals. The ingredients you will see under each recipe are taken from the shopping list.

Ingredients

  • Lean minced beef
    4.5 kg
  • American mustard
    1 bottle
  • Worcestershire sauce
    1 bottle
  • Egg
    2
  • Fajita mix
    2 packets (60 g)
  • Grated carrot
    2 bags (1 kg)
  • Chopped onion
    2 bags (1 kg)
  • Ready-chopped garlic
    1 bag (75 g)
  • Sliced mushrooms
    1 bag (500 g)
  • Chopped tomatoes
    6 tins (2.4 kg)
  • Passata
    3 cartons (1.5 kg)
  • Tomato puree
    1 tube
  • Dried oregano
    1 jar
  • Chilli powder
    1 jar
  • Kidney beans in water
    2 tins (800 g)

Method

  1. Lay out all your ingredients in the order you’ll be using them.

    Add a splash of oil to your large pan, then add in:

    • 6 cups of pre-chopped frozen onions
    • 3kg of lean mined beef

    6 cups grated carrot – to be added later

    Stir and allow onions and mince to brown. (This is the start of your fajitas, Bolognese and chilli).

    While the meat is browning you can now make the home-made burgers. Remember to stir the browning meat occasionally.

  2. Home Made Burgers

    Ingredients:

    • 750g lean minced beef
    • 3 large squeezes of American mustard
    • 6 teaspoons of Worcester sauce
    • 1 egg.

    Mix all the above ingredients in a bowl.

    Once mixed well, divide the mixture into 4, then halve again, you should have 8 similar sized balls of meat that you can shape into burger paddies.
    Label 2 freezer bags and place 4 paddies in each bag. Your burgers are now ready for the freezer.

    Stir your browning pot of beef, add the 6 cups of grated carrot, stir again and move on to making your meatballs.

  3. Home-made meatballs

    These are made similarly to the burgers so just use the same bowl as before.

    Ingredients:

    • 750g of lean minced beef
    • 8 teaspoons of Worcester sauce
    • 2 tablespoons of dried rosemary, basil or oregano
    • 1 egg.

    Mix all the above ingredients in a bowl.

    Once mixed well, divide the mixture into 2 large balls, then divide each ball into 4 equal portions and divide each of the 8 portions into 4 again so that you end up with 32 similar sized meat balls.

    Label 2 freezer bags and place ½ the meatballs into one bag, and half into the other. Your meatballs are now ready for the freezer.

    By now your pot on the top of the stove will be ready and you can drain out any excess fat.

    Do a quick tidy away of anything not needed from the burger and meatball recipe.

  4. Fajitas

    Ingredients:

    • 2 packets fajita / taco mix.

    Next make the fajitas!

    Label 2 small freezer bags and portion out 1-2 cups of cooked mince and carrot mix from the pot into each bag, add one packet of dry fajita or taco seasoning to each bag of mince, mix this through in the bag by gently shaking Leave bags open until fully cooled! Once cooled, seal and freeze flat.

    Optional- once cooled I often add a cup of frozen chopped peppers to each bag before putting directly back in freezer.

  5. Bolognese

    Take the large pan of cooked minced beef, onions and carrots, and add:

    Ingredients:

    • 2 teaspoons of frozen chopped garlic
    • 3 cups of frozen pre-chopped mushrooms
    • 6 tins of chopped tomatoes
    • 3 cartons of 500g passata
    • 4 teaspoons of Italian herbs, or oregano
    • 4 tablespoons of tomato puree

    Stir and heat for 10 minutes until sauce is thickened- use this time to do a quick tidy up and to open and drain your kidney beans for the chilli section.

    Label 2 large freezer bags, add 4 cups of Bolognese to each bag.
    (1 cup = 1-person portion)

    Leave open to cool, only seal and place in freezer once completely cool.

  6. Chilli

    Your large pot will have some mixture left, add the ingredients below to this to turn it into chilli.

    Ingredients:

    • 3 teaspoons of mild chilli powder
    • 2 drained and rinsed cans of kidney beans.

    Label 2 large freezer bags and divide the mixture between the two bags, again the portion should be 1 cup= 1 person, so four cups in each bag. Leave to cool then seal flat and freeze.

  7. Ready to Eat

    Allow to defrost overnight in the fridge.

    Bolognese sauce or Chilli
    Tip into a saucepan and stir over a medium heat or heat in a microwave oven until piping hot.

    Burgers
    Bake in oven at 180°C for 20-25 mins, turning once half way through cooking. Ensure piping hot all the way through.

    Meatballs
    Bake in oven at 180°C for 10-12 mins, turning half way through cooking. Alternatively, pan fry over a medium heat for 8-10 minutes.

    Fajitas
    Microwave for 3 minutes (or until piping hot) and serve on soft tortilla wraps, with ½ fat crème fraiche, lettuce, tomato and grated cheese.

  3. Really impressed cooked all of this today with ease and due to there only being 3 of us in household going down to 2 next week divided bolognese and chilli up into smaller portions so ended up with 15 as burgers split into 3 portions as well plus only used 4kg of mince too 😊 xx

  4. Is it really 6/8 TABLESPOONS of Worcestershire sauce for the burger/meatball recipes?
    I followed the recipe as above but just seen in your videos that you used TEASPOONS and now I’m worried that mine will taste awful 😔

  5. Where do you get your freezer bags from? I guess you will have tried and tested a few. Can they be re-used? I guess not?

    1. Hi Kelly, you can order freezer bags on my website under the BUY button – or get them directly from IKEA or most supermarkets. I always reuse mine – I recommend pushing the corners completely inside out and washing thoroughly in hot, soapy water, then leave to dry completely inside out. Once completely dry you can store them again, ready to use for your next batching session. Happy cooking!

  6. I have decided to start batching as I have 4 kids…11,9,2 and 7 months. I did my online click and collect order at asda. It was around £30 for the ingredients for 10 meals! This is going to save me so much time and money. Thank you!!!

  7. The recipes look amazing but, in either grams or ounces, how much should the cup hold? Is it a standard, American size, cup or a teacup or a mug?

  8. Hi just wondering about how to freeze it safely. I’m making a beef zucchini lasagne. Does the food need to be cold before I put it in the freezer. How long can I keep it for. Would a week be too long?

    1. Hi Maria Anne, Your food should be cooled down to room temperature before you put it in the freezer. Seal it well with the lid / reusable sealable freezer bag and it will keep in the freezer according to your freezer manufacturer instructions – should be about 1-3 months depending on your freezer.     I’ve just found your website after googling for Batch Cooking tips to stock the freezer with before baby is born and it looks absolutely amazing! Due to being in lockdown, with the reduced products available for sale in the supermarkets, I can’t get hold of American mustard anywhere. What would you suggest as an alternative (and how much!)? I can get English mustard powder, English mustard and Dijon mustard.

    Can I also ask, does the book also have some more of these “10 meals in 1 hour” plans?

    1. Hi Jill, thats great to hear! i would say a teaspoon of english mustard mixed with a little ketchup would work well if you can’t find american mustard. No, there isnt any 10 meals in an hour in the book but all the recipes are paired with another recipe so you can get 2 meals prepared at once as well as lots of three for the firdge, three for the freezer plans. Hope this helps!

  10. I am going to follow this one coming weekend. Although I changed it a bit. I am not making chili, but sheperd’s pie. So I will put it in half after putting the rest in except the pasata and italian seasoning and will use less pasata and I will add peas to that part of the mixture that is for the sheperd’s pie. The rest of the pasata will go with the meatballs.

  12. Winner in our house is this only thing is instead of making a chilli I did a lasagna using fresh pasta sheets everyone loved it ! Kids didn’t even know about the hidden veg which was great as my son is autistic and it’s hard to get him to eat carrot at times !

  14. Tried the 10 meals in an hour batch cooking……1hr and 20mins later, 2x burgers, 3x chilli, 3 bolognese, and 2 taco mix all with servings of 2! Had a moment and forgot the mince for the meatballs so made the extra bolognese and chilli 🤣 xx

  15. Hi, I just bought all the ingredients to make today. In your video you cook the meatballs but in the written method you don’t. Does it matter if they are frozen before cooking or should I cook them first?
