Leek, Pea and Spinach Soup

  • olive oil
    1 tablespoon
  • frozen diced onions
    1 cup
  • frozen chopped garlic
    2 tsp
  • leek
    1 large
  • frozen peas
    1 cup (170 g)
  • Fresh spinach
    500 g
  • vegetable stock
    600 ml

Method

    1. To a large saucepan add the olive oil and place on a medium heat. Add the diced onions, frozen garlic and diced leek and cook until soft.
    2. Once soft add the frozen peas, spinach and vegetable stock. Bring to the boil and then reduce the heat to a simmer for 8-10 minutes until everything is soft.
    3. Once soft, remove from the heat and blend the soup until smooth. Leave to cool.

     

  1. Ready to freeze

    Once cool, pour into soup freezer bags or tupperware and freeze.

  1. Ready to eat

    Leave the soup to defrost before heating through in a saucepan or in the microwave.

    1. 1 cup frozen leeks (around 200g) and 5 cubes of frozen spinach. Hope that helps!
