Parsnip and Carrot Soup

  • parsnips
    800 g
  • carrots
    400 g
  • olive oil
    1 tablespoon
  • runny honey
    1 tablespoon
  • dried sage
    2 tsp
  • frozen chopped garlic
    2 tsp
  • frozen diced onions
    1 cup (115 g)
  • vegetable stock
    1.5 litres
  • double cream
    1 splash
  • salt and pepper
    1 pinch

Method

  1. Turn the oven onto 180oc.

  2. Peel your parsnips and carrots and roughly chop. Add to a large baking tray and drizzle with olive oil, season and sprinkle over the dried sage. Put into the oven for 30 minutes to cook, checking and giving them a turn half way.

  3. Remove the parsnips and carrots and add the honey and return back to the oven for around 5 minutes

  4. Meanwhile, add a splash of oil to a large saucepan and add the diced onions and garlic and cook until soft. Once soft, remove from the heat and wait for the parsnips and carrots to be cooked.

  5. When they are cooked, remove them from the oven and add to the large saucepan of onions and garlic.

  6. Add the stock and bring to the boil. Check all veggies are soft.

  7. Once all the veggies are soft, remove from the heat and take a hand blender and blend the soup until smooth. Season well and add a splash of double cream.

     

  8. Ready to freeze

    Leave the soup to cool completely before adding to reusable freezer bags and storing in the freezer.

  9. Ready to eat

    Remove the soup for the freezer and leave to defrost completely. Reheat in a saucepan or in the microwave until piping hot, this will take around 5-8 minutes.

  2. Hi, where did you get the soup bags from please? Also, do you think it would be ok to air fry the carrots and parsnips?

    1. You can get these bags from lots of places, I think I got them from Home Bargins. They are called Tip n Zip bags, brill for sauces and soups. Ohh ive not tried an air fryer but I’m sure it would!

  5. Made this soup yesterday, absolutely gorgeous. Was going to freeze it for Xmas but we ate it for lunch !!! Will definitely be making more.
