Ingredients

Oil1 splash

Goan curry paste1 bottle

Chicken breast4 breasts

Tomatoes1 can (400 g)

Chickpeas1 can (400 g)

Frozen butternut squash chunks1 cup
Method

Add some oil to a large pan and allow to heat.

Add your goan curry paste to the oil and stir to allow the flavours to come out.

Next add your chicken and allow it to brown.

Then add in all other ingredients to the pan.

Cook on stove top on high until bubbling then reduce heat and simmer for about 45 minutes.

Ready for the Freezer
Once cooked, leave to cool then portion into labelled freezer bags and freeze flat. I froze mine beside some nan breads, so I had a full meal ready to grab

Ready to Eat
Take out bag from freezer and defrost overnight in fridge. Heat in microwave or in pot until bubbling and serve with rice or nan.
Hi there. For the Goan Curry, you have an * after the Goan curry paste in the list of ingredients but I can’t see any reference to it further on.
It says ‘add your goan curry paste’ but not how much to add? Also where do you source it from? I have seen it on Amazon but it’s quite expensive at over £6 a jar so would be handy to know how much of a jar you need to use in the recipe?
Hi Claudia, thanks for your feedback here and pointing out the missing comment “Brands vary in size and quantity so check label for guidance”. Hopefully your local supermarket stocks Goan paste from The Spice Tailor or Simply Cook as a couple of examples. The Spice Tailor version (currently about £3) is 300g recommended to serve 3 people but with the extra tomatoes in this recipe would go further for all 4. I hope you manage to find some.
