Freezable mint and coriander raita

The perfect accompaniment to a curry or to lamb koftas this raita is delicious. I always have some in my freezer to zhuzh up a dish.

  • Natural Yogurt (full fat)
    5 tablespoon
  • Tamarind paste (or lime juice)
    2 tablespoon
  • sugar
    1 tsp
  • Salt
    1 pinch
  • Coriander
    1 handful
  • Fresh mint
    1

Method

  1. Method

    Chop your mint and coriander, then add to a bowl with all other ingredients and hay presto you have perfect Raita.

  2. Freeze

    I freeze this flat in small bags, it does slightly separate when you defrost it, but mixed together again and if need be adding a little plain yogurt brings its creamy consistency back. I like to freeze it with lamb Koftas as it’s a great way to use up any excess herbs.

  3. Ready to Eat

    Simply defrost, add to a bowl and stir to regain original consistency. Great served with Flatbreads, lamb Koftas, Lamb burgers etc
