These are the perfect treat to have in the freezer that you can grab out and cook when you fancy something sweet!

Ingredients

soft butter130 g

caster sugar150 g

egg1 egg

vanilla essence1 tsp

plain flour1 cup (200 g)

baking powder1 tsp

pinch of salt1 pinch

milk chocolate chips100 g

white chocolate chips100 g
Method

- To a large mixing bowl add the butter and sugar and mix with an electric whisk for 3-4 minutes until light and fluffy.
- Next add the egg and vanilla and mix again and then add the flour, baking powder and chocolate chips and mix until all incorporated.
- Once you have a dough, place into a tub and pop into the fridge for 1 hour.
- After 1 hour, using an ice cream scoop, scoop out 12 balls of the dough.
- Once you have done all of them, place on a baking tray and into the freezer.
Ready to freeze

Flash freeze the dough balls for 1 hour until hard and then add to a freezer bag ready to grab when you want them.
Ready to cook

Remove however many balls you want to cook and place on a lined baking sheet. Make sure to space them out as the cookies will flatten as they cook. Place in the oven at 180oc for 15-16 minutes until golden round the edge but keep an eye on them as all ovens vary. Leave them to cool or enjoy them hot with ice cream!
